The whole brewing process is done by the hands of professional technicians, using the sophisticated additive-free method to lower the alcohol content down to 14%, which is a concentration that is much lower than any other kind of sake. 2020 version of Ohmine Junmai 2grain has increased the rice polishing rate from the previous version of 48% to an impressive 35%! The sweetness of peach with a hint of floral favor. The finishing has a very delicate sweetness and a clean crisp after-taste.
