In tasting it is full, round and full-bodied, characterized by an excellent persistence. A sake that is appreciated for its freshness in combination with an appetizer, tuna tartare or spaghetti with fresh tomato. Or with a risotto with apples and shrimps. With white meat dishes: turkey and pear rolls. Serve cold.

One year aged as "namazake" (unpasteurized sake) under 0 (zero) degree C and pasteurized just before shipping. This is Tokubetsu Junmai, but rice polishing ratio is very high =50% as Junmai Daiginjo. Bright citrussy, grapefruits note, great fragrance with delicate fruity sweetness, long elegant balanced pungent. Very aromatic, clean and refreshing sake.
