This dry Riesling is a single vineyard white Wine coming from the flagship Trial Hill Vineyard, once part (Block 1968) of the original Pewsey Vale Station, the oldest cool climate vineyard of Australia, first planted in 1847 at the instigation of Joseph Gilbert. A classic example of Eden Valley Riesling. A Wine of great structure and intensity of flavour, giving the Wine its lime and lemon sherbet characters.

The best blocks of Chardonnay fruit were harvested to produce this limited production. A portion of the juice was transferred directly to new French oak barriques for “natural fermentation”. The balance was inoculated with a yeast strain isolated from Burgundy. This yeast was chosen to enhance the varietal characters of the fruit and add complex fermentation characters such as fresh almond, hazelnut and toasted bread.
